Do you like youtiao? It is really popular in China and some Western countries because it's
crispy（酥脆的）on the outside and soft on the inside.
Its history goes all the way back to the Southern Song Dynasty. In the Southern Song Dynasty, Qin Hui and his wife, two bad people, killed Yue Fei. Yue Fei was a great person, so people were angry about this. In Lin'an, which is now called Hangzhou, a breakfast seller hated Qin Hui and his wife. He made two pieces of dough（生面团）like them, put them together and fried them in oil. People around heard of it and came to buy the fried food. Later it was called youtiao.
Here is the way to make youtiao. You can cook it at home easily. First, mix flour, baking powder（发酵粉），salt, and water in a bowl. Press（压）the dough until it becomes smooth （光滑的）. Cover it with a wet cloth and let it rest for 30 minutes. Second, roll the rested dough into a long strip（条）. Cut it into long pieces about 2 cm wide（宽）. Then, place one on top of another and press them together with a chopstick. Third, heat oil until it reaches $ 1 8 0° \mathrm{C} $ Carefully make each pair of dough pieces longer and drop it into the hot oil. Fry it until it turns a little yellow.(
