Ice cream is a delicious dessert. Many of us think of it as a modern Western invention. But in fact, it appeared in the Tang Dynasty. Back then, it wasn't called ice cream, though. Instead, it was known as "Su Shan".
According to historical records, "Su Shan" was often made by women. First, they would heat "Su", a product similar to cream or butter. After it melted(融化), they poured it onto a plate. Then, they froze it in an icebox. Sometimes, sugar was added on top. Flowers and leaves might also be added to make it more beautiful.
In The Noble Lady(《仕女图》), a famous wall painting found in the tomb of Crown Prince Zhanghuai(章怀太子墓), two women are holding "Su Shan". At first, researchers thought they were holding plants. After close examination, they found it was something more like today's ice cream, with flowers on top.
"Su Shan" was a popular dish during the Tang and Song dynasties. However, only rich people had large iceboxes to create the delicious dessert in summer. Luckily, today, we can all enjoy ice cream whenever we want!
