B
Hot dry noodles are a traditional food in Wuhan, Hubei Province. They have been part of Chinese food culture for many years. In Wuhan they are a typical(典型的) breakfast dish, and can be served from 5:00 a. m. until midnight. Some snack bars even offer them 24 hours a day.
It is said that in the early 1930s, there was a small restaurant run by a man. He made a living by selling noodles and noodle soup in Hankou. One day, he accidentally put some oil into his noodles. The next day, he boiled the noodles and added other condiments(调味品). To his surprise, his noodles soon became very popular because they
were delicious. Many people asked him what noodles they were. He said they were sesame paste noodles(麻酱面). Many years later they were called hot dry noodles.
The recipe for hot dry noodles is different from that of cold noodles and noodles in soup. First, mix the cooked noodles with oil and let them cool. When ready to serve, put the prepared noodles in boiling water to heat them through. Then add green onions and other condiments. The noodles are ready to enjoy.
