Hot Dry Noodles

Other ingredients include salad oil, red oil, garlic seeds, diced radish (萝卜丁), pickled (腌制的) beans, brine (卤) sauce, vinegar, etc. Hot dry noodles taste slightly spicy and salty.
Shanxi Sliced Noodles
Shanxi sliced noodles are also called “emperor’s son-in-law noodles”. It is said that Shanxi sliced noodles were invented by Chai Shao, the husband of a princess in the Tang Dynasty. The noodles were cut with a knife and shaped like willow (柳树) leaves, so they got the name.
If you want to make the sliced noodles, knead (揉) the dough until smooth, slice it into medium-thick pieces and boil them. When the noodles are done, add small pieces of meat and seasoning (调味品) cooked before. Now, you can enjoy it.
