In China,the most widely consumed parts of the lotus plant are the lotus roots.
This dish is Steamed Lotus Root Stuffed with Glutinous Rice. It's a combination of sticky rice mixed with osmanthus flowers(桂花)and honey,then stuffed into the channels of a whole lotus nodule. This concoction(混合物)is then steamed,chilled and served in slices.
The seeds of the lotus plant have long been used in traditional Chinese medicine. They can be eaten raw,but are often dried and then boiled till soft and tender. In the core of the lotus seed is a green embryo called lian zi xin(heart of the lotus seed). This is particularly bitter but good for health. Lotus seeds can be used to make tea.
The lotus leaves can be used to encase food like rice mixtures for steaming. They can be used to make tea too.
