I'm glad to know that you are coming soon. Don't worry about your Chinese. You can improve it by speaking with local people every day and watching Chinese TV shows. It's also helpful to learn some basic phrases first, like "Ni hao" and "Xiexie".
As for Chinese customs, there are a few important ones. When meeting someone for the first time, we usually shake hands. It's polite to call older people "Laoshi" or "Shushu" instead of their names. At the dinner table, we don't stick chopsticks upright in the rice, and we wait for the elders to start eating first.
Ganzhou is a friendly city, and people here are happy to help. I can show you around when you arrive. You'll get used to everything quickly.
