To me, the most unforgettable food isn't an expensive restaurant dish, but my mum's braised pork(红烧肉). This soft and delicious home-cooked meal carries warm childhood memories, and every bite is full of mum's love.
When I was in primary school, I was a picky eater and hardly ate meat. Mum worried about my growth and tried many ways to make meat I liked. Finally, she found braised pork worked. Every weekend, she got up early to buy fresh pork. She cut it into small pieces, blanched(焯) them in hot water to clean, then fried them with sugar until golden yellow. After that, she added a little sauce, some spice and water, and cooked slowly on low heat for about an hour. When ready, mum always put the softest piece into my bowl first. She sat beside me, smiling as she watched me eat happily.
Now I'm in middle school and live at school. Whenever I go home, mom still makes it for me, and I even learn to cook it with her help. To me, it's never just a dish, but a symbol of mum's love. Every bite warms my heart, and I'll remember this taste of love forever.
